    Any recipe calling for more than a Tablespoon of sugar or brown sugar, any recipe calling for balsamic vinegar, …garbage. Find rice wine, find rice vinegar and some prefer Black rice vinegar, I'd use little or no hoisin, I'd want soy sauce..I don't like Kikkoman, I'd want some oyster sauce for the marinade among other things, sesame seed oil… most American recipes and restaurants serve garbage. Apparently they think we want a thick sweet sauce on everything. Orange juice and brown sugar is a definitely not..as if orange chicken and kung Pao are even similar. I mean, I'll eat it. I won't complain.. But I won't order it again. *I wrote this before I watched. That looks like a good recipe. Restaurants in the know make a lot of sauce dishes with a chicken base and water mixture. I'd just write chicken broth.. but like chili sauce, I don't want the base broth to have a strong chicken taste. I'd say the majority of franchise and non franchise alike just order premade sauces for each dish and vary them with this and that. And to me that's a mistake both for quality and for the bottom line. I'm sure they're just thinking minimum wage obtains minimum skill and they want it to be the same "recipe" every time. So they order premade.

    Chicken: 340g (12 oz)
    Garlic: 2 large cloves, sliced
    Chilli pepers: 1/2 cup, cut to desired length
    Sichwan peppercorn: 1tsp/5g
    (0.175 ounce)
    Fried Peanut : 2 ounce

    To 12 oz chicken pieces, put salt, 1 tbs soy sauce, 1/2 tbs shaoxing coking wine, 1Tbs water & cornstarch and marinade.

    Prepare sauce:
    Sugar: 1 Tbs (15g)
    Sweet Black Rice Vinegar: 1 Tbs
    Soy sauce: 1 Tbs
    Shaoxing wine: 1 Tbs
    Cornstarch: 1 Tbs
    Chicken broth: 2 Tbs
