Chinese Chicken with Onions in Oyster Sauce ingredients
Serve 2 – 3 pax
————
1 piece chicken thigh meat (~230g or 8.1oz or 0.5lb
2 rmedium sized red onions (can be replaced with yellow onions)
2 dried chilli – rehydrated
4 cloves of thinly sliced garlic
2 stalks of spring onion
1 tablespoon of oyster sauce
1 tablespoon of premium dark soy sauce
1 tablespoon of low sodium light soy sauce
1 teaspoon of sugar (skip this if yellow onions are used)
4 tablespoons of Chinese white rice wine
A few dashes of white pepper
Some cornstarch solution

    Your recipes are 98% close to authentic Cantonese Chinese style but with the local Singaporean touch.

    In the year 2000+, you have Hong Kong chefs distorting the real Cantonese recipes. I miss the proper Hong Kong chefs of the 1980-90s.

    I love your recipes and no doubt about it. They are very few good Chefs on YouTube and you can count yourself as one of them. The rest are COOKS and they distort the authentic Chinese recipe.

    Sometimes, you refer that corn flour and corn starch are the same. The stores in Europe and the US views these differently. I use cornflour like a flour and starch as a sauce and soup thickener.

    I am lost in my Cantonese cooking, haha

    Please clarify.
