I often have left over rice from dinner, so recently I’ve been finding ways to enjoy it for breakfast. I hope you find them satisfying, yummy and nutritious! Spicy salmon egg scramble, miso sesame silken tofu, radish and spam musubi, soft boiled egg and avocado, steamed tomato and shrimp and finally, edamame meat floss and fermented bean curd! Hope it can give you some ideas, I think they’d make great lunches or even dinners as well

1. Miso Sesame Silken Tofu Rice Bowl
Ingredients: A slice of silken tofu, cucumber slices and a miso sesame sauce (1tsp miso paste, 1tsp sesame paste or peanut butter to substitute, glug of soy sauce and 2tsp of water – add to a small bowl and mix it all together)
Onto the heated rice, add the cube of tofu, cucumber and pour on the sauce. You can add some spring onions, sesame and bonito if you have it on hand!
2. Radish and Spam Musubi
Ingredients: Slice of spam, sliced radishes, soy sauce and sugar (optional wasabi)
Cube the slice of spam and fry in a little oil until golden brown, add soy sauce over all of the spam and a spoon of sugar, mix well so the sugar and soy sauce is all mixed together and leave to caramelise for about 1-2 minutes. Arrange the sliced radishes onto the heated rice, add the spam musubi and sesame and wasabi if you’re into those flavours.
3. Spicy Smoked Salmon Egg Scramble
Ingredients: 1 egg, 1tsp of milk, smoked salmon slice, black pepper, pinch of salt and siracha (optional coriander)
Whisk the egg, milk, salmon, salt and black pepper together. Into a frying pan on low heat add the whisked egg and create big curds by using a flat spatula and big strokes. Onto the hot rice, add siracha or other hot sauces, add the egg scramble and top with more siracha and coriander.
4. Soft boiled Egg and Avocado
Ingredients: 1 egg, 1/2 avocado (optional soy sauce or salt, black pepper and furikake)
Add a room temperature egg into boiling water and boil for 7 minutes. Remove and run under cold water or an ice bath. Peel the egg and cut in half. Cut 1/2 an avocado and slice. Onto the hot rice, add black pepper and furikake if you have it. Top with the egg and avocado – add soy sauce or salt to your preference.
5. Edamame, Meat Floss and Fermented Bean Curd
Ingredients: Handful edamame, meat floss and fermented bean curd (I like spicy but use which ever you like)
Boil your edamame and add it, the meat floss and the bean curd cube onto the hot rice. Mix it together and enjoy!
6. Steamed Tomato and Crispy Shrimp
Ingredients: 1 tomato, Chinese ‘dried shrimp’, soy sauce or salt and optional green onions
Cut a cross on top of a tomato and steam for 15-20 minutes. Do this the night before so morning prep is easy. Cut the tomato in half (or use the whole thing), place onto COLD rice and microwave as instructed above to reheat the whole thing together. Crisp up the shrimp in a pan until golden (no oil needed), you could also just use eggs, sausage, cheese, fish, whatever protein you want. Add this onto the rice and top with green onions!

The bowls look so good! Can you do some lunch/dinner bowls with more protein in them? I love meat + rice bowls, I think the magic is in the sauces going on. The silken tofu looks so good, I used to eat it out of the pack with soy sauce on it so good. My favourite morning rice bowl is actually raw egg mixed in with rice and furikake inside. Delish! Be careful on the raw egg, see safety guidelines esp if living in the US.
